This “fleur de sel” from the salt flats of the Iberian Peninsula is formed by the evaporation of seawater on hot, windless summer days. The very fine layer of salt is deposited on the surface of the water, which is carefully removed by hand. Refined with saffron, it adds a special touch to your dishes.
